With temperature going down, I started feeling hungry for more comforting food. Who said comfort has to be unhealthy and heavy? With this flavoured soup, you will get the carbohydrates your body is sometimes craving, the V.I.A (very important antioxidants) and fibers. All these without a high level of saturated fight.
For 4 people
1/2 red pepper, diced
300g corn drained
2 shallots chopped
1 garlic clove chopped
2 pinches paprika
4tbs coriander, chopped
1tbs olive oil
75cl vegetable stock, heated
4 tbs creme fraiche (for healthier option, take a half-fat version)
75g brown rice
salt, pepper
In a sauce pan, heat the olive oil and toss the shallots, garlic and red pepper. Cook for 10minutes.
Pour the hot vegetable stock over the mix. Add the corn, rice, paprika, salt and black pepper and cook for 20 more minutes.
Split the soup in 4 bowls. In each, add 1tbs chopped coriander and 1tbs of creme fraiche.
