Fish of the Day: Oriental Trout in Foil Parcels

This is Omega-3 time of the week! Trout is a very good alternative to the usual salmon fillet. It is a bit leaner but will bring you as much as proteins, vitamins and nutrients. This recipe, full of Mediterranean flavours will make a very healthy but filling main course. The presentation will also be perfect if you have guests around.  



                                  
For 4 people
4 rainbow trout
50g golden raisins
1tbs dry oregano
2 onions
2 zucchini
2 tomatoes
1/2 tea spoon cumin
4tbs olive oil
salt, pepper

Preheat the oven at 180C.
Rehydrate the raisins in water. Chop the onions finely, slice the tomatoes and zucchini. Place the onions in the centre of 4 pieces if foil. After washing and drying the trout, lay them on top of the onions.
Cover the fish with tomatoes, zucchini and raisins. Season with oregano, cumin, salt and pepper.
Pour 1tbs olive oil on each trout and close the foil. Bake in the oven for 15mn. Serve the foil parcels on individual plates.
