Mackerels?? Yes indeed... It is one of the most nutritional fish we can eat, thanks to the Omega 3 oil that it contains. Ideally we should be eating this kind of fish three times a week. Besides, it has the fabulous quality of being inexpensive.
For 4 people
To eat with: Green beans or sauteed spinach (dont forget to add a bit of garlic when you cook them!)

4 mackerels, filleted
3 spring onions
3tbs whole grain mustard
3tbs white wine
2tbs olive oil
2tbs of balsamic glaze (or balsamic vinegar)
Salt & pepper
Preparation:
Preheat the oven at 200C
Place foil paper in a baking tray. Lay each fillet on the foil.
Season with salt and pepper, add olive oil and white wine on the fish.
Add the whole grain mustard and the balsamic glaze on top of each fillet
Finally, cut the spring onions all over the fish (green and white parts)
Place in the oven and cook for 10-15mn (depending of the size)
To drink with: a dry Rose (Cote de Provence) or a dry white wine (Muscadet-sur-Lie, Burgundy)
