The combination of sweet beetroot, zesty oranges and warm cinnamon is very unusual but delicious. This dish can be served as a healthy light lunch or as a starter for dinner. It will bring you anti-oxidants and Vitamin C, perfect to fight the change of weather.
For 4 people :
650g beetroot, cooked, peeled
650g beetroot, cooked, peeled
1 orange, peeled and sliced
30ml orange flower water
1tbs sugar
1tbs ground cinnamon
salt and ground black pepper
7 almonds, crushed (optional)
Cut the beetroots in big dices or wedges. Arrange them in on a plate with the slices of oranges or toss them together in a bowl.
Gently heat the orange flower water with the sugar, stir in the cinnamon and season with salt and pepper. Pour over the beetroot and orange salad and chill for at least 1hour before serving. You can also add some crushed almonds on top.
