They are coming in 10 minutes!

I came up with these quick and easy recipes because it seems that I am never able to leave the office early enough to cook, shower, get dressed when I invite people to my house for dinner. Now you will not have to chose anymore between a relaxing bath and a perfect dinner for your guests. Say goodbye to frozen meals!





Fig & Ham Rocket Salad
For 4 people
200g rocket salad; 8 figs; 8 very thin slices of Parma ham; 1tbs balsamic vinegar; 3tbs walnut oil; salt and pepper.

Mix the vinegar and the oil together with a bit of salt and pepper in a serving plate.
Wash and spin the rocket before putting it on the plate. Cut the figs in quarters and arrange them on the salad. Roll the ham and put them between the figs.



Little Tuna and Pink Peppercorn Pates
For 4 people
600g tuna in brine; 4tbs creme fraiche; 2 tbs lemon juice; 4tbs pink peppercorn; salt and pepper.

Drain the Tuna. With a fork, mix it with the creme fraiche, the lemon juice, the salt and the pepper. Add the pink peppercorn.
Split into 4 ramekins dishes. Serve chilled with toasted bread.


Fish Tartare served with a Lemon Mousse

For 4 people
600g raw fish (salmon and sea bream for example); 4tbs olive oil; 1 red chili; 2 lemons; 1 bunch of coriander; salt and pepper

Peel the lemons. Mix thinly  the zest of the lemon, the pulp, with the chili, the coriander (keep a couple of leaves for the presentation), the salt, pepper and the olive oil.
Cut the fish with a knife in small dices, seasoned with salt and pepper. Split the fish into 4 ramekins and place the lemon mousse on the side. decorate with coriander leaves and serve chilled.


Sesame Duck Filet

For 4 people
600g duck filet; 4tbs honey; 2tbs soy sauce; 4 tbs lime juice; 3tbs sesame seeds; salt and pepper.

In a salad bowl, mix the honey, the soy sauce, the lime juice with a bit of salt and pepper.
In a frying pan, cook the duck filet with the olive oil for 5 minutes (turn them 3 or 4 times). Add the sauce, leave on the fire for 1mn and then serve in a presentation dish. Add the sesame seeds on top on the duck.



Mixed Herbs Beef Tartare
For 4 people
600g mince beef meat; 2 egg yolks; 10 sprigs of chive; 4 sprigs of flat parsley; 2 sprigs of basil; 1tbs Dijon Mustard; 1tbs English mustard; 2tbs ketchup; 1tea spoon Worcestershire sauce; 2 tbs olive oil; salt and pepper.

Cut the herbs.  Reserve a sprig of parsley for the presentation. In a salad bowl, mix the egg yolks, the ketchup, both mustards, the Worcestershire sauce; the olive oil, the alt and the pepper. Add the meat and mix everything together.
Divide the preparation in 4 and arrange on the plates and place some parsley on the top. You can also serve on slices of toasted bread.
